Spicy Red Lentils

INGREDIENTS:

 

1.     1 CUP of red lentils

1 LARGE onion, chopped

3-5 CLOVES of garlic, minced

3 TBLS butter

4 TSP cumin

2 TSP turmeric

4 TSP chili powder

 

2.     1 28 Oz. CAN of chopped or diced tomatoes

2 CUPS vegetable broth

1 ¼  CUPS canned coconut milk

2 TBLS lemon juice

 

INSTRUCTIONS:

-- Sauté all the ingredients in 1.above in a skillet until the onions are clear.

-- Combine all the ingredients in 2. above in a soup kettle or dutch oven.

-- Add the sautéd ingredients from the skillet to the soup kettle mixture.

-- Cook until lentils are cooked to desired softness and add salt.

 

SERVES: 

     Serves 4-6.
