Yummy Black Bean Soup

A.) Ingredients:
1 lbs. black beans –cleaned
5c. water
1t. salt – no worries, this will not toughen the beans.1 hamsteak
1/8 t. baking soda – this will help keep the dark color of the beans.
2 bay leaves
1 med. yellow onion – diced
1 carrot – diced
1 celery rib – diced
3T. olive oil
6 cloves garlic – crushed
½ t. red pepper flakes
1 ½ T. cumin
6c. chicken broth – low sodium is OK
2T. cornstarch
2T water
limejuice
sourcream
cilantro – fresh & chopped
avocado -cubed
B.) Instructions: a lot of ingredients but easy to make!
1.) Into stock pot,
1 lbs. black beans –cleaned
5c. water
1t. salt – no worries, this will not toughen the beans.1 hamsteak
1/8 t. baking soda – this will help keep the dark color of the beans.
2 bay leaves
-Bring to a boil and then cover & lower the heat to a simmer.
-Simmer for 1 ¼ - 1 ½ hours. You are looking for the beans to be “creamy” when smooshed between your fingers not overcooked and “blown apart”.
-Remove the bay leaves and discard.
-Pull out the hamsteak & dice. Set hamsteak aside for later.
2.) Into a sauté pan - the following Mirpoix ingredients
1 med. yellow onion – diced
1 carrot – diced
1 celery rib – diced
3T. olive oil
-Sauté until soft
3.)Add to the above Mirpoix
6 cloves garlic – crushed
½ t. red pepper flakes
1 ½ T. cumin
-Let cook for 3 mins.
4.) Add to the above Mirpoix to the stockpot with the cooked beans and all liquid.
5.) Add 6c. chicken broth – low sodium is OK
6.) Simmer for ½ hour.
7.) Puree ½ of the soup – this will make a creamier consistency.
8.) Add the diced hamsteak to the soup
9.) in a glass jar
2T. cornstarch
2T. water
Shake until blended, pour through a sieve into the soup (to remove any lumps) and stir until thicker / approx. 3-5 mins. You may find it not necessary to add all of the cornstarch mixture – just what you think will bring the soup to the right creaminess.
10.) Ready to serve!

Sourcream
Cilantro – fresh & chopped
