Banana Ham Fritters

6 medium sized, medium ripe bananas, peeled
1 1/2 teaspoon salt
1/8 teaspoon pepper
Filling
2 cups ground cooked ham or 1 can (12 oz) luncheon meat
1/4 cup milk
3/4 cup dry bread crumbs
2 eggs beaten
Salad Oil for frying
8 lemon quarters
1. In medium skillet, bring 1 inch water to boiling. Add bananas, salt and pepper. Cook, covered, over medium heat just until bananas are soft.
2. Drain bananas well. Return to skillet; heat slightly to dry out, Mash. Let cool. Makes 2 cups.
3. Meanwhile make the Filling:
In medium bowl, combine ham and milk; mix well. Divide mixture into eight parts
4. On a sheet of waxed paper, flatten 1/4 cup mashed bananas in to a 3 1/2-inch round. Place ground ham in center: fold banana over ham, covering completely. Roll in bread crumbs; dip in egg. Reroll in crumbs. Shape into an oval croquette, about 4 inches long. Repeat with rest of mixture. Set aside while heating oil.
5. In a deep heavy saucepan, heat salad oil (2 inches deep) to 375F on deep-frying thermometer.
6. Deep Fry a few at a time, turning once, until golden: 2-3 minutes on each side. Drain on paper towels. Serve with lemon quarters. Makes 8 servings.
